Bacon Brussels Sprouts

This is one of those simple dishes that you could serve as a side or just sit and eat the whole bowl.  On your couch.  In your pajamas.  Just saying….

I cook this in a cast iron pan so if you use another type your cooking time may vary.  Also, make sure that you don’t get sprayed with bacon grease when you add the brussels sprouts.  I just try to make sure my sprouts are dry when I add them in.  I hope you love this as much as we do!

6 pieces of bacon (I use organic turkey bacon)
1 lb. of brussels sprouts.
1/3 cup walnuts
salt to taste
pepper to taste

Start by frying the bacon in a 12 inch skillet on medium heat.  While that is cooking wash and quarter the brussels sprouts length wise.

IMG_1545 When the bacon is cooked remove it from the pan and set aside.  Add the brussels sprouts to the pan and cook in the bacon grease stirring occasionally for 15 minutes.  While the sprouts are cooking dice the bacon into bite sized pieces.  Add the walnuts and bacon to the pan and cook for about 5 more minutes.  Season to your personal taste.

Makes about 4 small servings (or 1 very large, shameful one)
