Stuffed Pesto Chicken


This is one of my husband’s top 5 favorite dinners.  And I have to agree.  The taste is delicious and it will fool your dinner guests into thinking you worked all day preparing it.  It is also very kid friendly.  My 2 year old gobbles it down like it is candy.  Here is how you make it:


  • 4 chicken breasts
  • 1 cup of Pesto

Preheat your oven to 375 degrees.  Filet the chicken 3/4 of the way through each breast.  Lay the chicken in a 9 X 12 baking dish and stuff each breast with the pesto reserving about 1/4 cup.  With the remaining pesto spread lightly over the top of each breast.  Bake uncovered for 30 minutes.  Next cover with an oven safe lid or foil and continue to bake for 20 minutes.  Take the lid off and let the top brown for 5-10 more minutes.  Cool and enjoy!
