Easy Stovetop Kale

IMG_1367When we jumped on the kale bandwagon we jumped hard.  We are a kale loving family.  We eat kale raw in salads, baked into chip form, in our soups, and most often right off the stovetop. Here is a super easy and quick recipe that satisfies even the grumpiest of kale eaters.

Ingredients:

  • 1 bunch of cut up kale
  • 2 tbsp avocado or walnut oil
  • 1/4 cup sunflower seeds
  • Salt and Pepper to taste

Warm up the oil in a 12 inch skillet/pan (I like to cook on cast iron as much as possible and I find the kale turns out crispier then in a traditional pan).  Add the kale to the pan and cook with a lid on for 5 minutes, stirring occasionally.  IMG_1352

Remove the lid and add the sunflower seeds and salt and pepper.  Cook uncovered for about 10 more minutes stirring frequently.  Makes enough for 4 servings.
